A display of dried fava beans for sale at a southern Italy market in the Puglia region. Fava beans are also referenced as faba beans, broad beans, horse beans, field beans, tic beans and bell beans. In Puglia there is a regional dish of wild chicory leaves cooled and served with a fava bean puree. Dried fava beans are favoured by italians in making soups, purees, stews, and relishes. They can also be eaten dry as a snack.
